4 cups small green gherkins or firm cucumbers
12 bay leaves
1/2 stick of celery
whole pepper corns or 6 chillies (remove seeds)
fresh vine leaves
3/4 cup of salt
Dill seeds, fresh stalks or leaves (if only dried dill is available, rehydrate in water before use) to taste
Mace or oregano
3 litres (6 pints) water
600ml (1 pint) white wine vinegar
Wash cucumbers or gherkins and wipe. Place into clean screw-top jars, layer with leaves, peppers and spices. Mix vinegar with water in which the salt has been completely dissolved. Pour water/salt/vinegar into jars until cucumbers or gherkins are completely covered. Seal temporarily with plastic wrap ensuring cucumbers or gherkins are completely submerged in vinegar mixture. Place in a cool, dark cupboard for three weeks. During each week skim any froth or foam from the surface in each jar and top up with a little extra water/salt/vinegar mixture made to same proportions as recipe. At the end of three weeks seal the jars using screw top lids. Note if metal lids are used they may rust if in contact with the vinegar mixture, so seal with greaseproof or baking paper before adding lid or use plastic lids (as in old peanut paste jars).
